Cooking time: 3 minutes
Ingredients:
2 peaches, chopped
1 cup coconut milk
1 cup steel cut oats
½ vanilla bean
2 cups water
Directions:
Put the peaches in your instant pot.
Add coconut milk, oats, vanilla bean and water and cook for 3 minutes.
Leave aside for 10 minutes to release pressure and serve.

Instant Pot Strawberries and Oats Breakfast
Servings: 2
Preparation time: 5 minutes
Cooking time: 10 minutes
Ingredients:
1/3 cup old-fashioned rolled oats
2 tablespoon dried strawberries
A pinch of salt
2 cups water
2/3 cup almond milk
½ teaspoon coconut sugar
Directions:
Put the water in your instant pot.
Add strawberries, oats, almond milk and sugar.
Cook on High for 10 minutes, leave aside to release pressure, transfer the oats to breakfast bowls and serve.

1 and ½ cups quinoa
2 tablespoons maple syrup
2 and ¼ cups water
¼ teaspoon cinnamon, ground
½ teaspoon vanilla
A pinch of salt
Sliced almond for serving
Directions:
In your instant pot, mix water with maple syrup, quinoa, cinnamon, vanilla and salt.
Cook on high pressure for 1 minute, leave 10 minutes aside to release pressure, pour into breakfast bowls and serve with sliced almond on top.

Servings: 6
Preparation time: 20 minutes
Cooking time: 10 minutes
Ingredients:
1 cup steel cut oats
4 cups water
1 tablespoon coconut butter
2 teaspoons cinnamon, ground
1 cup carrots, finely grated
3 tablespoons maple syrup
1 teaspoon pumpkin pie spice
A pinch of salt
¼ cup chia seeds
¾ cup raisins
Directions:
In your instant pot, mix coconut butter with water, cinnamon, carrots, maple syrup, salt and pumpkin pie spice and cook on High for 10 minutes.
Leave pot aside to release pressure for 10 minutes, add oats, chia seeds and raisins, cover pot and leave it aside for another 10 minutes.
Transfer the carrot oatmeal to breakfast bowls and serve it right away!

1 and ½ cups steel cut oats
1 and ½ cups pumpkin puree
4 and ½ cups water
1 teaspoon allspice
1 teaspoon vanilla
2 teaspoons cinnamon powder
½ cup coconut sugar
¼ cup pecans, chopped
1 tablespoon cinnamon
Almond milk for serving
Directions:
Put the water in your instant pot.
Add oats, pumpkin puree, 2 teaspoons cinnamon, vanilla and allspice.
Stir, cover, cook on High for 3 minutes and then release pressure.
Meanwhile, in a bowl, mix pecans with sugar and 1 tablespoon cinnamon and stir well.
Sprinkle this over pumpkin oatmeal and serve with almond milk.

1 and ½ cups arborio rice
2 apples, diced
2 tablespoons coconut butter
A pinch of salt
1 and ½ teaspoons cinnamon
1/3 cup stevia
1 cup apple juice
3 cups almond milk
½ cup cherries, dried
Directions:
Put coconut butter and rice in your instant pot, cover and cook on High for 6 minutes.
Uncover instant pot, stir the rice and mix it with apple juice, almond milk, apples, raw sugar, a pinch of salt and cinnamon, cover and cook on High for 10 minutes.
Serve your breakfast rice in medium bowls with dried cherries on top.

Instant Pot Breakfast Porridge
Servings: 6
Preparation time: 10 minutes
Cooking time: 35 minutes
Ingredients:
¼ cup split yellow gram, roasted
1 tablespoon split Bengal gram, roasted
1 and ½ cups banana, chopped
1 cup almond milk
1 cup rice, washed
3 cups water
2 cups jaggery, chopped
3 tablespoons cashews, chopped
1 teaspoon cardamom powder
2 tablespoons raisins
¼ teaspoon nutmeg powder
Some saffron strands
Directions:
In your instant pot, mix yellow and Bengal gram with rice, almond milk and 2 and ½ cups water and cook on High for 5-6 minutes.
Release pressure and leave aside for now.
In a bowl, mix jaggery with the rest of the water, stir and pour everything into a pan heated over medium high heat.
Cook for 7 minutes, stirring often and then add the rice and gram mix.
Stir again and cook for 4 minutes.
Add raisins, cashews, stir and cook for 2 minutes.
Add cardamom powder, nutmeg powder, saffron and bananas, stir and cook for 1 minute.
Pour this into breakfast bowls and serve right away.
